From an early age Jean Ducloux had two consuming passions, cooking and music. Much later, when he became a famous restaurateur, he was able to satisfy both ambitions - feeding his customers well while they listened to his collection of organs from merry-go-rounds. The masterpiece of this collection was a great Gavioli instrument, built around 1860/70; at first, it functioned by means of spiked cylinder, but in 1910 it was modified to work with a system of perfored cards. It was unusually large and could drive nine clockwork figures, two drums, a bass drum and more than 500 pipes.
